Pineapple Fried Rice

  • 2 cups of pre-cooked brown rice (cold)

  • 2 tbl of canola oil

  • 1 tsp finely chopped ginger

  • 1 clove finely chopped garlic

  • 1 cup – freshly chopped pineapple *

  • 2 small carrots chopped

  • 1 small red onion chopped

  • 1/2 red bell pepper chopped

  • 2 tbl tamari

  • 1 tbl sesame oil (add more if you think it needs it)

  • 1 medium orange juiced

  • 1 cup frozen green peas

  • 1/4 cup unsalted peanuts crushed

  • 2 tablespoons coriander chopped

  1. Heat oil in pan. Add the onions, bell pepper, garlic, ginger and carrots to the pan, and fry until soft.

  2. In a small bowl, whisk together the soy sauce, sesame oil and orange juice.

  3. Add the cooked rice to the frying pan with the pineapple, peas and sauce. Toss the fried rice to coat it with the sauce, then taste and adjust.

  4. Serve with peanuts and coriander... OR you can serve in half *pineapple shells.

Cooking time is very quick, the best thing to do is prepare every ingredient before you start cooking.
