A quick to make and very tasty and healthy salad or snack is Cucumber with Miso:
This will serve two people
I telegraph cucumber, peeled and chopped into chunks
2.5 TBL of Miso Paste
1.5 TBL of Water
2 TBL Rice Vinegar
1 TBL Honey
1 TBL Toasted Sesame Seeds.
Bring to the boil all the ingredients except the sesame seeds then simmer for 1-2 minutes until the mixture starts to look sticky. Remove and cool.
Add the cooled Miso mixture to the cucumber then toss in the sesame seeds.
