Serves One (all my recipes are made for the single person, just double or two etc) 1 cooked beetroot chopped 1/3 chopped up leek 1/2 cup quinoa (rinsed) 1.5 cups of vegetable stock 1 tbs chopped parsley 1 tbs coconut oil (or oil of choice) Goats cheese to dollop Melt the coconut oil and add the leeks. A quick to make and very tasty and healthy salad or snack is Cucumber with Miso: This will serve two people I telegraph cucumber, peeled and chopped into chunks 2.5 TBL of Miso Paste 1.5 TBL of Water 2 TBL Rice Vinegar 1 TBL Honey 1 TBL Toasted Sesame Seeds. Bring to the boil all the ingredients except the sesame seeds then simmer for 1-2 minutes until the mixture starts to look sticky. Remove and cool. Roast Pumpkin & Pinenut Fritters with Avocado, Lime & Tahini Mash (Gluten Free)

Half a pumpkin Diced (and roasted with Olive Oil) 3 TBL Gluten Free Flour 1 egg 2 TBL Pine Nuts Chopped Parsley or Chopped Dill 1 ripe Avocado 1 Lime (juiced) 1 TBL Organic Tahini Mash the pumpkin then add the flour, pinenuts and whisked egg.
